How to seal the herringbone stone

I am at the point of cutting the firebrick which is embedded in sand and made flush with perimeter brick. As I understand, the ash from cooked pizza will eventually fill in crevices / voids. I understand this part; I’m concerned about the exposed crevices around the pizza oven ( Outside perimeter ) . Won’t water enter through the voids of stone and eventually freeze which would be problematic for the base collectively ? What am I missing? Please help.

Once the oven is built, 3 of the 4 sides of the herringbone hearth cooking surface will be covered with the oven itself. If you have herringbone exposed on the sides… we need to talk (can you add a pic?).

Also - Be sure to seal the oven & base every year with an NON-TOXIC MASONRY SEALER like:

Thank you so much; This make a lot of sense… I’m still on leveling the Herringbone in sand set up. Tonight, I’ll evaluate if sides and back will be exposed once brick is set, wire wrapped , blanket wrapped , cement layer applied and cosmetic layer applied.
