What size should the cooking surface actually be?

I’m starting to build my Mattone Barile oven and I’m running into an issue figuring out how big the cooking surface should be. Looking at the size of the hearth (56" x 47"), if I use 8" bricks on the sides, the void of the cooking surface would come out to be 40" x 31".

However, looking at the instructions for casting the hearth, they call for making one foam board at 27" x 18.5" and two at 27" x 8.5". This would result in a void of 27" x 35.5".

Which size is correct for the cooking surface? I want to make sure I have everything correct before moving forward.

You will want to stick w/ the insulated void dimensions as shown on the Mattone Barile Installation Instructions as they are the dimensions that match the bottom of the Mattone Barile oven.

No matter the size of the edge brick used… 8"… 7"… or even no edge (like in a concrete countertop), the void dimensions under the Mattone Barile pizza oven base are used to match the dimensions under the Mattone Barile pizza oven.
